Co-Owner and Chef of BRC Gastropub off the Washington corridor in Houston. This small but high volume pub which serves hand crafted American comfort food and craft tap beers has been a hit since it opened in April of 2010. Based on a huge menu which hits all the right spots and especially the wallet, you will enjoy a great BRC House ground Pub Burger ($7 with fries every Monday), Hawaiian poke salad, Brooklyn Hot Dogs and Short Rib Grilled Cheese. Lance has been a notable Chef in Houston going on eleven years and has no plans to stop. Currently he and his partners at BRC are weeks away from launching Petite Sweets, a small dessert shop on Alabama and Kirby specializing in handmade French Macarons, Mini Cupcakes, Cake Balls and high Fat Soft Serve Custard. A few weeks after Petite Sweets opens, expect Liberty Kitchen and Oyster Bar to open a few blocks from his Glass Wall location on 11th and Studewood. Liberty will again have a huge menu with a price point that will please the pocket. Focusing on Peach wood Grilled Fish and Meats, Liberty will also have an Oyster Bar serving fresh West, East and Gulf Oysters as well as all the fun things we expect in a Seafood House, like Mexican Seafood Cocktail, Oyster Stew, Grilled Oysters, and Deviled Crab dip to name a few.
Owner of Glass Wall- the restaurant which is located in the Historic Houston Heights. In 6 short months Glass Wall- The Restaurant was named Best New Restaurant and Best Interior and a year later Restaurateur of the Year at the Culinary Awards for My Table Magazine.
Lance was the Chef and Co-Owner of Zula Restaurant, as well as partner in Big Night Venture’s management company that opened the Mercury Room, The Boaka Bar and Trevisio Restaurant in the Texas Medical Center. During this time at Zula, he garnered Up and Coming Chef of the Year in 2001 and Chef of the Year in 2004 from My Table Magazine.
Previously he was the Executive Sous Chef at The Houstonian Hotel, Club and Spa from 1993-2000. Lance trained under Jim Mills, currently the hotel’s General Manager.
The early days of his career led him from The Culinary Institute of America to Brennan’s of Houston.
Lance has been a resident of the Heights for over 11 years and has many ties to the community. He has served on the Board of Director’s for The Houston Food Bank. He has also spent his time and has raised money for Kid’s Café, a Houston Food Bank program that teaches at risk children the basics of cooking and nutrition. He has also been an instructor for Recipe for Success; a program that teaches students at low-income elementary schools how to eat in a more healthful manner and prepare their own meals.
In his spare time, Lance can be found on the Little League field helping coach his son’s baseball team and paddle boarding around the Heights streets. A lot of the time he doesn’t want to be found, so he goes to places like Bali, Costa Rica and Mexico to go surfing, play his guitar and relax.
